I originally planned to make a Top 10 list but looking back at all the games that I've played only a few boss fights were actually really easy compared to the harder encounters. There are two types of easy boss fights, a. The boss was really easy to beat and its movements were predictable, and b. they are initially challenging but there's a strategy to beat the boss flawlessly.
Take note though all the games in this list were from my experience playing handheld console games.
1. Several Castlevania boss fights
Title Order of Ecclesia
Boss: Dracula
Reason/Strategy: As the big boss of his own game, it's quite odd to be the easiest boss out of the flock. But to be fair with the Prince of Darkness, there's really only one strategy against him for a "less than 10 seconds victory". Any other strategy would probably make it one of the hardest boss fights ever in Castlevania history.
All that's needed for king cold butt to bite the dust (again) is a barrage of Nitesco + Melio Falcis (or any other blade-type glyph) Glyph Union, some 150 or more hearts and quick button inputs. Two death rings also prove to be helpful but it's also risky. The key here is that once the battle starts quickly charge in and don't let Dracula move or teleport. After maybe 10 or 12 hits, there'll be a cut-scene and simply use the Glyph Union of Dominus and you're all set to get the special medal of beating Dracula without getting injured.
Title: Portrait of Ruin
Boss: Doppelganger
Reason/Strategy: The Doppelganger is an optional boss found in the Nest of Evil in Portrait of Ruin. It's the last boss before you get the extra strong Greatest Five dual crush. As the name would suggest, the Doppelganger takes the form of the stronger of the two characters (Charlotte or Jonathan) in the game. So if you have Jonathan at level 70 with the activated Vampire Hunter and all the other optimal weapons equipped, you'll be fighting yourself in that kind of difficulty. But there's a trick - just remove all equipment of Charlotte and Jonathan before entering and you'll find that the Doppelganger is as weak and fragile as an eggshell. Re-equip all the best gear and smash away.
Title: Dawn of Sorrow
Boss: Dmitri Blinov and almost all the bosses in the game
Reason/Strategy: His boss fight was pretty much the same as the Doppelganger in Portrait of Ruin. The only difference is that he only copies Soma's Bullet Soul. So you could just equip an Une and pummel him from a safe distance with a hard hitting weapon.
There's also a quick and easy way to pummel almost all the bosses in the game but it takes quite a long time of farming for the materials needed. The Devil guardian soul and Valmanway is the best combination to make quick work out of the bosses and the Boss Rush Mode.
Title: Symphony of the Night
Boss: Count Olrok, Galamoth and Dracula
Reason/Strategy: This is one of the most famous example of easy wins. With the Shield Rod and Alucard Shield Combo, all you need to do is stand next to the enemy and let the shield do all the work. Easy as that. And it also serves as an insult to Dracula. Yep, defeated by a shield (with the help of a rod).
An alternative would be to acquire the Crissaegrim by farming from the Schmoo which are found at the Forbidden Library in the inverted castle. While the sword isn't the strongest in the game, it's the fastest one with absolutely no recoil (heck you can even walk while attacking) and the range is significant similar to the Valmanway. What's more, Alucard can equip two weapons at once so don't go alone with one Crissaegrim, go with two and all your problems will go away.
2. Title: Code of Princess
Boss: All of the Bosses in the game
Reason/Strategy: Code of Princess packs some challenging boss fights and that one survival stage. It doesn't help if you keep alternating between the four main characters in campaign mode which is why the game's emphasis in level grinding is one of its charming points (even if it gets old real quick). If your aim is to get through the main story quickly then simply play with the strongest of the four with considerable speed - Solange. To succeed in most of the difficult bosses in the later half of the game (starting with Liongate), it's best to make use of the in-game mechanics. Switching between the three planes in each stage helps to get the advantage against the opponent. Time your switches and make sure you're ready to attack once the boss gets near and switches plane to yours then hack and slash your way to victory. In cases where the boss is the one hacking and slashing you just active the burst to temporarily stun them then do your thing.
3. Title: Bravely Default
Boss: Ominas Crowe
Reason/Strategy: There's no particular strategy to this guy. He's just plain easy to beat. Unlike the first boss fight in the prologue against Barras Lehr and Holly Whyte where you only have Tiz and Agne's, the battle against Crowe was a massacre for him.
4. Title: New Super Mario Bros., New Super Mario Bros. 2
Boss: Bowser
Reason/Strategy: Bowser isn't particularly an intimidating boss whether in the first world where he's all jump and fireball, or in the last world where he's with Bowser Jr. and completely oversized. There's always a pattern against the bosses in the Mario series and figuring it out is one of the key to an easy win. But there's something much easier than figuring out the pattern, just visit a Mega Mushroom house and store it until the final confrontation. Just charge in on Bowser and boom you're a winner...and you also get a kiss from Peach.
In NSMB2, the final battle is easier as you only have to dodge Bowser's gargantuan hands and leap from platform to platform. It's just a real test of platforming expertise. But to ease the difficulty, a serving of the Tanuki Leaf (or the Golden Tanuki leaf) makes the whole boss fight a mini-game.
5. Title: Disgaea: Dark Hero Days
Boss: Fake Zenon
Reason/Strategy: Another final wuss. There's nothing really special against this faker other than his cool transformed form but other than that, the final stage is easy. The classes that I used were tier 2 to 3 Samurais, Thieves and Kunoichi. The Theif and Kunoichi are useful for inflicting status ailments, while the Samurais simply Moon Slashed the living daylights out of Fake Zenon. I finished with Adelle and Rozalin. The final battle was so unacceptable that I wished for the real Zenon to take over Rozalin for one last canon boss fight.
6. Title: Pokemon X
Boss: AZ
Reason/Strategy: Game Freak broke Pokemon tradition when they surprised us with a post-League main story battle. It's not exactly much of a boss fight but since AZ is one of the primary characters in Pokemon X, you'd guess just how important winning the battle is for the main character and the story. AZ only have three Pokemons on his roster that are as ancient as him (Torkoal, Golurk and Sigilyph) all at level 60. If you surpassed the Pokemon League then there's really no problem in this battle unless your pokemons are all Grass, Fighting and Fire then you're in for a difficult final battle. But overall, this last main story battle is like Zack vs. Genesis after Zack vs. Genesis Avatar.
